Al-Jawāb as-Sahīh li-man baddala dīn al-MasīhIbn Taimiya

“Is not He who created the heavens and the earth able to create the like of them?” (36:81)

He also says,

“O people! If you are in doubt about the Resurrection, then [consider that] We created you from dust, then from a drop of fluid, then from a clinging clot, then from a lump of flesh—partly formed and partly unformed—so that We might make things clear to you. We cause to remain in the wombs whatever We will for an appointed term; then We bring you forth as infants, then so that you may reach your full strength…” (22:5)

…up to His words,

“You see the earth lying lifeless; but when We send down water upon it, it quivers, swells, and produces every splendid kind.” (22:5)

Thus, exalted is He, uses the very beginning of the creation of living beings and the sprouting of plants as proof of the possibility of bringing the dead back to life. He mentions this argument in many places in the Quran; setting it out in detail belongs elsewhere.

The point here is that the claim, “This is possible and therefore needs no evidence,” is insufficient. To know that something is possible, it is not enough merely to lack evidence for its impossibility. Allah, exalted is He, is capable of all things, whereas what is impossible—by the unanimous agreement of rational people—is not a “thing” at all. Whatever Allah creates must necessarily entail its concomitants, and its opposites must be absent; otherwise, the existence of that which entails them would itself be impossible.
